Joe Kraefft played rugby for Shore, Sydney University and New South Wales before lining up beside Nicholas Shehadie, another inductee of the Mosman Sporting Wall of Fame, in his first international match against New Zealand. He also played in the Australian second row on the 1947-48 Wallaby tour of Great Britain, France, Canada and the United States.
He is noted in Jack Pollard's book Australian Rugby Union: The Game and the Players for being "a man of immense stamina, tough and uncompromising on the field, but gentle and mild-mannered between games".
Joe's sporting interests were not restricted to Rugby Union. In 1947 he was also the Captain of Palm Beach Surf Lifesaving Club.
